63 Preparation and Evaluation of Bitter Vetch Protein Chitosan Composite Nanofibers by Electrospinning Nushin Afshar n afshar2318 @yahoo com Department of Food Science and Technology Isfahan University of Technology Isfahan 84156 83111 IranDgree M Sc Language FarsiSuporvisors Hajar Shekarchizadeh shekarchizadeh@cc iut ac ir Mehdi Kadivar kadivar@cc iut ac irAbstractToday a grate attention has been paid to natural biopolymers as biocompatible and biodegradablematerials for inclusion and controlled release of bioactive compounds Chitosan is a natural cationicbiopolymer and is the second important polysaccharide after cellulose It has gained high interest due toits antimicrobial properties against different microorganisms such as fungi yeasts and bacteria Itsantimicrobial properties are seemed to be due to the presence of positively charged amine groups Thehigh viscosity of pure chitosan solution limits the production of pure chitosan nanofibers One approachto overcome this limitation is to mix some other natural biopolymers including proteins with chitosansolution Visia ervili is a natural protein with low cost and high content of energy which could be used toreduce chitosan solution viscosity However the presence of some anti nutrient factors limits its usage So in order to improve its nutritional quality it s necessary to omit or reduce these factors first The aimof this study was to produce chitosan visia ervili nanofibers via electrospinning Firstly chitosan visiaervili solutions were prepared by dissolving different weight ratios of chitosan to visia ervili intrifluroacetic acid solvent Secondly Nanofibers were produced at the voltage20kv and tip to collectordistance was 15cm Then the fiber morphology thermal properties FTIR and XRD patterns wereinvestigated According to the result diameter average was 200 nanometr and crystal structure wasdecreased and resistance was incresaed after of product nanofibers In the next step mint essential oilwas encapsulated within chitosan visia ervili nanofibers Finally according to the results the ratio of20 was selected as the best ratio and the morphology thermal properties FTIR XRD of the nanofibersinvestigated Also the release and storage stability of essential oil were examined According to thefindings mint essential oil could be encapsulated within chitosan visia ervili electrospun nanofibers Keywords electrospinning natural biopolymer nanofibers essential oil
