66 Effects of Edible Coating Chitosan and Hexanal on the Storage Life of Tomatoes Fruits Lycopersicon esculentum Mill cv ezmir Fereshteh Bayat Fereshteh91 b@gmail com June 23 2017 Department of Horticultural Science Isfahan University of Technology Isfahan 84156 83111 IranDegree M Sc Language FarsiSupervisor A Ramin aa ramin @cc iut ac irAbstract Tomatoes are including Jat Seyfi Which is very important economically Also due to abundant vitamins Minerals Nutrition is of particular importance Annual significant percentage of post harvest tomato crop isdestroyed Among the process post harvest Proper packaging plays an important role in reducing waste Improve the quality and sustainability of horticultural products Cover fruits and vegetables with edible film orcoating Reduce the migration of moisture and breathe fresh fruits and Thus maintaining the quality andProlonging the shelf life of them General coverage of chitosan and new coverage of Edible coatings areHexanal That in order to maintain quality Slow breathing speed and control of dental caries have been used The present experiment to find the best concentration of chitosan and Hexanal To increase the shelf life tomatovarieties were Izmir In the first experiment the effect of chitosan treatments With concentrations 0 0 5 1 and2 The shelf life tomatoes was investigated After treatment fruits and keep in storage temperature 10 C Toevaluate the shelf life At intervals of 7 days out And indicators such as firmness cent Weight loss pH of theextract Vitamin C Acid titratable TSS Antioxidants And cent decay were evaluated In a second experimentthe effect of the concentration Hexanal0 1 2 and 3 A similar experiment was carried shelf life tomatoes Thethird experiment to compare between the best chitosan derived from the first experiment and The best treatmentHexanal obtained from the second test and They were combined with each other 4 treatment 0 distilled water chitosan 0 5 Hexanal 2 and the combined application of chitosan 5 And Hexanal 2 Similar tests weredone before The third experiment was a split plot design In time In a completely randomized design with threereplications The results of the first experiment showed that chitosan coating except for soluble solids organicacid and extract pH and antioxidant had a significant effect on other indices of measurement The least weightloss and caries and the highest rigidity in chitosan treatment were 0 5 which had a significant difference withother treatments Also the highest content of vitamin C in the treatment of 0 5 chitosan was obtained Theresults of the second experiment showed that hexanal treatment except for the amount of organic acid solublesolids extract pH and antioxidant has a significant effect on other measured parameters The lowest weight losswas observed in 2 hexanal treatment which had a significant difference with other treatments The lowestpercentage of caries and the highest amount of vitamin C and rigidity in the 2 hexanal treatment wereobtained which showed a significant difference with control treatment The results of the third experimentshowed that the combined coating of chitosan and hexacanth had no significant effect on soluble solids extractpH organic acid and vitamin C but had a significant effect on weight loss rigidity caries and antioxidants keywords Tomato Postharvest Edible Coatings Chitosan Hexanal
