Moisture content determination of quince fruit during drying process using laser light back scattering imaging Hajar Aghili h aghili@ag iut ac ir June 9 2018 Department of Biosystems Engineering Isfahan University of Technology Isfahan 84156 83111 IranDegree M Sc Language Farsi1st Supervisor Seyed Ahmad Mireei samireei@cc iut ac ir2nd Supervisor Morteza Sadeghi sadeghimor@cc iut ac irAbstractIn recent years due to the awareness of quality many advances have been occurred inquality assessment techniques of fruits vegetables and foods Laser light back scattering imaging LLBI method is regarded as an efficient and non destructivetechnique for predicting the quality indices of agricultural materials On the other hand drying is one of the most important postharvest operations for processing theagricultural products Determining the moisture content of the product during drying isan extremely substantial operation to control the product s condition and evaluate thedrying performance The conventional measurement method involves placing theproduct on the scale which due to the contacting nature this method has its ownlimitations In this research we tried to measure the moisture content of the quince fruitduring the drying process using LLBI method In order to dry the quince slices andsimultaneously acquire their laser light back scattering images a special dryingchamber set up was first designed and constructed This set up was then connected to ahot air dryer with adjustable air temperature and velocity Using a digital camera placedon the top of the set up the light back scattered images were collected by illuminatingthe infrared wavelength of 980 nm with 25 mW power and green wavelength of 532nm with 1 mW power lasers All drying experiments were carried out at a constant airvelocity of 0 5 ms 1 The drying temperature was adjusted to three levels of 50 60 and70 C After determining the initial moisture content of the samples using the standardoven method the remaining slices were then used for drying and imaging purposes Theexperiments were performed over a period of 3 days In each day the laser light back scattering images of 10 quince samples were acquired and the samples wereimmediately weighed This was repeated every 30 min until the samples reached to aconstant weight In order to analyze the images the region of back scattered light weresegmented from the background using the Mahalanobis distance method Numericalhistogram and statistical variables of the back scattered images were selected as theinput features Moreover for each image a plot was obtained via radial distance ofsaturation region from its center of gravity against the rotation angle using the Cannymethod Finally the combination of histogram feature and the saturation region plot was 79
