Effect of nutrition growth regulators and fruit harvest time on quantity and quality of oil in some olive cultivars Nasim Bastam n bastam@ag iut ac ir February 2 2021 Department of Horticulture Isfahan University of Technology Isfahan 84156 83111 Iran1st Supervisor Bahram Baninasab bbanin@iut ac ir2nd Supervisor Mostafa Mobli Mobli@cc iut ac ir Associate Professor of Horticultural Science Department of Horticulture College of Agriculture Isfahan University of Technology Professor of Horticultural Science Department of Horticulture College of Agriculture IsfahanUniversity of TechnologyAbstractOlive oil is one of the best and healthiest vegetable oils whose nutritional value hasbeen proven The chemical composition and quality of olive oil are affected by severalfactors such as cultivar yield nutrition environmental conditions harvest time post harvest factors and oil extraction method Despite all the efforts made to expand olivecultivation in the country research is needed to create solutions to increase the amountand quality of olive oil produced in the country Therefore this research was conductedin the form of three separate experiments with the aim of examining practical solutionsto improve the quantity and quality of olive oil In the first experiment with the aim ofdetermining the best fruit harvest time the trend of changes in the quantity and qualityof olive oil during four different harvest stages from the beginning of fruit color changeevery two weeks 12 October 26 October 10 November and 24 November on Fourdifferent olive cultivars with oil application two domestic cultivars Roghani and Zardand two imported cultivars Amphissis and Beladi were evaluated in 2016 In this partof the study maturity index oil content quality parameters and oil fatty acid profileswere measured In the second experiment with the aim of investigating the effect of treeyield on the quantity and quality of oil growth regulators of benzyl adenine andnaphthalene acetic acid each in two concentrations 100 and 150 mg l 15 days after fullbloom stage were sprayed on four cultivars Roghani Zard Amphissis and Beladi Inthis part of the study the physical properties of the fruit oil percentage oil qualityindicators fatty acid profiles and the percentage of initial and final fruit set weremeasured and studied In the third experiment foliar nutrition of zinc in two mineraland chelated forms with different amino acids in two stages of full bloom and 15 dayslater to evaluate the physical properties of fruit quantity and quality of oil in differentolive cultivars for two consecutive years 2017 and 2018 was performed In the firstyear mineral zinc zinc sulfate and chelated with the amino acids histidine methionineand threonine were applied on Beladi cultivar In the second year based on the resultsof the first year in addition to the mineral form treatment of zinc the best aminochelatetreatment of the first year zinc methionine was selected and repeated and twotreatments of zinc aminochelate zinc lysine and glycine replaced the previous twoamino acids In addition the amino acid lysine was added In the second year the 158
