Abstract In spite of the good aroma and flavor of cooked rice for common rice varieties inIsfahan province they have excessive breakage losses qualitatively So recognition anddetermination of physical and mechanical properties of these varieties are a matter ofimportance In this study some principal physical and mechanical properties of current ricevarieties in Isfahan was determined at different moisture content Also the correlation ofhead rice yield HRY with these properties was investigated This consideration wasconducted using a randomized complete design with factorial layout that included twovarieties Sorkheh and Sazandegi and three level of moisture content MC 12 14 and16 wet basis as the main parameters In determining physical properties dimensions major intermediate and minor diameters geometric mean diameter GMD andsphericity weight bulk and true density porosity static coefficient of friction over thesurfaces of different material and angle of repose were sub parameters For determinationof mechanical properties two compression and three point bending tests were conducted Some principal mechanical properties such as biological yield point maximum ruptureforce and energy apparent modulus of elasticity and toughness were determined undercompression test from the force deformation curves of rice kernels Similarly maximumrupture force and energy maximum bending strength and apparent modulus of elasticitywere gained under three point bending test According to statistical analysis of data theeffect of variety type on dimensions weight bulk density porosity static coefficient offriction and angle of repose was significant at 0 1 statistical level SL Effect of varietieson true density was not significant Also the MC had a significant effect at 1 SL on minordiameter and weight 0 1 SL on bulk and true density porosity static coefficient offriction and angle of repose and 5 SL on GMD The GMD sphericity true density staticcoefficient of friction and angle of repose increased and bulk density decreased as MCincreased The concrete galvanized wood and glass surfaces had the maximum staticcoefficient of friction respectively The statistical analysis for compression test indicatedthat variety type had a significant effect at 1 SL on yield point and apparent modulus ofelasticity and 0 1 SL on maximum rupture force and energy and toughness The results ofbending test showed that varieties had a significant effect at 0 1 SL on maximum ruptureforce and bending strength and at 1 SL on rupture energy The effect of variety type wasnot significant on apparent modulus of elasticity The effect of MC was not significant onnone of mechanical properties for both tests The effect of varieties and MC was significanton HRY The maximum 36 and minimum 20 HRY belonged to Sorkhe with 16 MC and Sazandegi with 12 MC respectively The correlation between HRY andmaximum compression and bending force in various treatments showed that maximumbending force is a better indicator of HRY
