AbstractDrought is the most important environmental factor that limits crop yield through the world About 96 7 percent of Iran s land is classified as arid and semiarid climates Wheat is one of thethree most important cereals in the world and its quality properties are affected by drought Theobjectives of this research were to find the effect of different irrigation regimes on quality yieldand yield components of two wheat cultivars namely the bread and durum cultivars Theexperiment was conducted at Lavark farm Isfahan University of Technology s specializedresearch farm using a randomized complete block with a split layout and replicated three times Five irrigation regimes I1 70mm I2 90 mm I3 110mm I4 130mm I5 150mm were used asmain plots and two wheat cultivars Roshan and Shwa were subplots Hectoliter weight starchpercent starch amylose content fat percent protein percent and the amount of minerals inwhole grain were measured as quality parameters and plant height number of spikes per squaremeter leaf area index spike length kernel number per spike weight of 1000 kernels grainyield straw yield and harvest index as yield and yield component parameters were measured All yield components except harvest index and spike length were decreased as drought levelsincreased Hectoliter weight fat percent and starch content decreased while protein content andmineral concentration increased when severe drought occurred Reduction of kernel weight anddilution effect added the protein percent and grain s mineral concentrations in moisture deficitconditions The highest variations in quality parameters were observed in I4 treatment becauseof the short and stressful grain filling period These results show that starch accumulation wasmore sensitive to moisture deficit than protein accumulation Nitrogen copper and manganesevaried more than the other minerals due to moisture stress but protein and mineral yieldsdecreased under drought conditions Grain yield was affected by irrigation regimes and reducedto 48 3 percent in Shwa cultivar and 25 7 percent in Roshan cultivar This showed that Shwacultivar was more sensitive to moisture deficit but this cultivar Shwa had higher grain yieldunder sufficient water situation than Roshan and produced less straw yield than Roshan Number of spike per square meter kernel 1000 weight and kernel number per spike showedhigh correlation with grain yield respectively Finally both moisture deficit and irrigationschedule affected grain quality yield and yield components of two cultivars Grain qualityproperties were affected by moisture deficit and both protein and minerals yield decreased eventhought their concentrations in grain increased by drought
