Abstract Apple Malus Domestica Borkh being produced 70 million tones annually is regarded as the mostimportant fruit in the temperate zone Iran with land race apple and 2 7 million tones annual production is aprincipal centre of apple production in the Middle east During post harvest operations the product is lost byalmost 20 percent Golab Isfahan apple is an important land race in Iran with unique flavour Time period ofsupplying the apple to the market is very short and still demands exist in other seasons than time However itsstorage for long time is very difficult due to soft texture high free water and abundant sugar content Harvestingthe fruit on physiological maturity stage that increases storage life is a main character influencing postharvestlife The aim of this study was finding the best time of harvest Golab Isfahan apple to increase storage life andto decrease post harvest lost of product The fruits were picked in four maturity stages 63 71 80 and 90 daysafter full bloom stage from two Malling Merton 111 vegetative and seedling stocks and then stored in sixdifferent time periods of 0 20 40 60 80 and 100 days at 2 C and relative moisture of 85 The experimentwas done based on completely randomized design as split split plot in time with 3 replications Fruits weretaken out from storage every 20 days and some physico chemical properties of them being measured Resultsshowed that harvest stage significantly influenced all measured parameters p 0 001 Increase of fruitmaturity showed a decrease in weight loss percentage fluorescence chlorophyll chlorophyll content fleshfirmness titrable acidity and tissue starch However soluble solid content fruit water percentage and juice pHwere increased At the end of storage least weight loss percentage was observed in third harvest of fruits 80days after full bloom and most weight loss was observed in first harvest The most of fluorescence chlorophylland chlorophyll content were found in fruits first harvest and least of these indexes were observed in fourthharvest of fruits Best texture firmness was also measured in those third harvested however most and least offirmness was found in first and fourth harvet respectively Highest soluble solid content percentage was againfound in fruits harvested at 80 days after full bloom and least of SSC was found in fruits of 90 days after fullbloom Highest of titrable acidity was observed in fruits of third harvest and least of it was again found in lastharvest In general changes in the fruit physico chemical parameters during storage period indicated that thirdharvested preserved their quality of fruits significantly better than fruits of other harvests and showed theuppermost market acceptability at the end of the storage Thus the optimum harvest to increase storage life for Golab Isfahan was obtained with fruits of 2 21 kg firmness 12 68 percent soluble solid content and268 1 mg titrable acidity in harvest time as equal to 80 days after full bloom Keywords Malus Domestica Borkh Golab Isfahan harvest stage fruit quality after harvest
