Effect of Manganese Sulfate and Ferous Sulfate on Yield and Quality of Mushroom Agaricus bisporous Bahareh Bahman b bahman@ag iut ac ir November 2 2014 Department of Horticultural Science Isfahan University of Technology Isfahan 84156 83111 IranDegree M Sc Language FarsiSupervisor Mostafa Mobli mobli@ag iut ac ir AbstractButton mushroom Agaricus bisporus from Agaricaceae family is the most common mushroom areproduced in the world as well as Iran Mushroom like any other plant organism has its own dietary needs Its food requirements will be provided through the compost Macro and micro elements must exist to theextent required for suitable yield Therefore In this study the effect of adding manganese and iron to thebedding compost of on yield and quality of the mushroom were investigated This study were done inKabir unit of Yekta Mushroom Company is located near Jarghoye region in 1392 2013 Two separateexperiments were conducted in a randomized complete block design In the first experiment to determinethe appropriate concentration of manganese and iron seven treatments were used In addition to thecontrol no addition of iron and manganese the 3 concentrations of 100 200 and 300 mg of Mn per kgdry substrate and three concentrations of 250 500 and 750 mg of Fe per kg dry substrate was used Thesecond experiment was planned based on the results of the first experiment In this experiment 4treatments containing 300 Mn 500 Fe 300 mg Mn 500 mg Fe per kg of dry substrate and control wereused For both expriments necessary amount of manganese sulfate and ferric sulfate for every 4 of blocksof compost an experimental unit was calculated and disored in a liter of distilled water and sprayed onthe surface of the compost penetrate to a depth of 5 cm Harvesting was done at the 3 Flash In addition tomeasuring the overall yield of each exprimental unit test samples of 400 g 250 g in the secondexperiment was selected Fresh and Dry weight of the cap and stipe diameter and length of the cap stipe was measured In the second flash in addition to the previous mentioned samples a sample formeasuring firmness soluble solids extract pH organic acids L value weight loss during storage themarketability concentration of manganese and iron in tissues of button mushroom was taken The resultsof the first experiment showed that the highest yield diameter and length of stipe respectively wasobserved in treatments of 300 mg Mn and 500 mg of iron per kg dry substrate where significantlyincreased 17 7 and 16 5 when compared to control The maximum diameter of the cap was obtainedby treatments of 500 and 300 mg per kg of iron and manganese respectively Treatments showed nosignificant effect on percentage of fresh weight of cap stipe dry matter of cap stipe percent ofweight loss organic acids marketability firmness total soluble solids pH Whiteness Adding iron tothe planting bed reduced the amount of iron in the tissues compared with the control The second studyshowed that the two treatments of 300 mg of Mn and 500 mg Fe per kg of dry substrate increased theyield by 15 65 and 13 4 respectively But the combination of both Mn and Fe hadn t significant effecton the yield compared to control The cap diameter stipe diameter and length were increased significantlyby 300 mg Mn and 500 mg Fe per kg a substrate comparet to control Finally it can be concluded that300 mg Mn and 500 mg Fe per kg of dry substrate can increase the yield Key words Button mushroom Fe Mn Quality Yield
