Abstract :
Cholesterol oxidation products (COPs) that are readily produced by the autoxidation of cholesterol in foods of animal origin have received considerable attention due to their biological activities related to human atherogenesis, carcinogenesis, and cholesterol biosynthesis in several investigation, COPs such as 3,5-cholestadien-7-one, 5-cholesten-3B, 7a, -diol,5 -cholesten-3B, 7a-diol, 4,6 cholestadien-3- one, cholestan -3B,5a,6B triol, 5-cholesterol -3B- 01 7 -one,and 5-cholestesten -3B,5a,6B-triol were the most potent toxic agents in the initiation of the atherosclerotic plaque formation.Production,processing,packaging and prolonged storage of foods containing cholesterol under unfavorable conditions,would cause formation and accumulation of COPs in such foods. The importance of COPs in foods and related heart disease (CHD) in man have been studied and reviewed in this article. The COPs of several food items such as dairy powders have been dletermined by GC (Capillary). Results showed that packaging such foods in suitable laminates would prevent accumulation of COPs significantly and could be consumed by a lower risk of CHD.
