84 Measurement of Oxygen and Water Vapor Diffusion Coefficients of Packaging Films Produced from Fungal and Shrimp Chitosan Shima Dayarian s dayarian@ce iut ac ir September 9 2112 Department of Chemical Engineering Isfahan University of Technology Isfahan 84156 83111 Iran Degree M Sc Language Farsi Supervisor Akram Zamani zamani akram@cc iut ac ir Supervisor Ahmad Moheb ahmad@cc iut ac ir Abstract The application of edible films which are produced on the basis of biopolymers by mechanical properties and desirable barrier permeability has been increased a lot in packaging industries Because of low permeability of edible films against moisture oxygen carbon dioxide perfume and fats they are used in food packaging industries Among these films chitosan is one of the interesting films because it has an efficient film forming property and it is biodegradable biocompatible and nontoxic In this project chitosan of shrimp and Mucor indicuss fungi cell wall as the source of chitosan were used to produce the film In order to produce the cell wall film we utilized acetic acid lactic acid as the solvent and glycerol as the plasticizer At first acetic acid was used but this film had not desirable quality In order to compare the properties of this film with other edible films we produced films by chitosan CH and carboxymethyl chitosan CMCH and mixture of CH and CMCH They were made by acetic acid 0 M as the solvent and glycerol as the plasticizer Another solvent that used for CMCH film was water The result indicated that CH film had higher tensile than CMCH film by water 606 and acid 36 By increasing the plasticizer tensile strength was decreased in all the films Carboxymethyle chitosan film which made by acid had higher tensile and permeability than CMCH with water CH film had higher tensile and permeability of Oxygen OP than other films but it had lower Water Vapor Transmission Rate WVTR In mixture of the films by increasing concentration of carboxymethyl chitosan Oxygen permeability was decreased Film made by 506 CMCH by having 30 3 0 g cm h permeability had the lowest WVTR The highest tensile and lowest Water Vapor Transmission Rate related to film mixture film with 856 carboxymethyl chitosan The cell wall film had 6 MPa Tensile strength and 66 Elongation at break Oxygen permeability of this film was 0 668 0 cco m day atm and Water Vapor Transmission Rate was 3 0 5 0 g cm h SEM micrograph of CH and carboxymethyl chitosan films indicated that the surface of films were smooth but the micrographs that were taken from cross section of films were different Chitosan and carboxymethyl chitosan films with acid had some holes and they had not uniform surface On the other hand CMCH film with water had flat surface In mixture films carboxymethyle chitosan with 856 concentration had the flattest film and so it had a high tensile and low permeability In addition it can be realized from the images that pretreating the cell wall film caused the better quality of that In spite of many efforts that have been done to improve the quality and property of call wall film its property is weaker that chitosan and carboxymethyl chitosan film Key words edible film Mucor indicuss fungi cell wall film carboxymethyl chitosan chitosan plasticizer permeability
