Effect of Chitosan Coating on Storage Life of Apple cv Golabe Kohanz and Soltani Behnaz Rostamzadeh b rostam@ag iut ac ir 21 septamber 2013 Department of Horticultural Science Isfahan University of Technology Isfahan 84156 83111 Iran Degree M Sc Language Farsi Supervisor A A Ramin Prof aa ramin@cc iut ac ir Abstract Apple is an important horticultural crop that accounted for a large share of the country s exports each year But the apples produced in Iran do not have a good quality and long shelf life due to unsuitable storage and packaging in terms of marketing Nowadays new technologies are demanded to extend the life of harvested fruits and vegetables Using wax not only improves the appearance of the fruits but also increases their quality and shelf life by reducing the spread of mold and moisture loss The advantage of coating agents is reducing transpiration and respiration leading to maintain the quality and enhanced shelf life of the fruits But improper use of these treatments will cause an undesirable flavors in the fruit due to exchange of oxygen and carbon dioxide and anaerobic respiration Chitosan the most important coating agent is used during the post harvest procces Coating with chitosan plays a positive role in shelf life of fruits and vegetables because chitosan coating prevents mold growth and creat an active packaging and a good quality of the fruit for a longer time In this research the effect of different levels of chitosan 0 0 5 1 2 associated with a commerical chitosan Chitin Seal 901 on the shelf life of apple cv Golab kohanz and apple cv Soltani was studied After storage at 1 C and 90 RH Fruits were evaluted every one month for apple Soltani and 21 days in the case of Golab Kohanz In terms of some traits such as firmness weight loss pH extract soluble solids and titratable acid vitamin C total phenolics flavor index and antioxidant capacity and measured decay The study was conducted as a split plot in time within a complete randomized design in 3 replications Result of analysis of variance showed that effect of time treatment and interaction of among them for most studied traits were significant The results showed that apple cv Golab Kohanz fruit treated with chitosan exhibited a longer cold storage period firmness vitamin C soluble solids and titratable acid than those control The pH of the extract and the percentage of weight loss was significantly less than the control The highest firmnness 2 14 kg cm2 was recorded with 2 and then 2 10 kg cm2 1 chitosan as there was no significant diffrence between them and the lowest firmness 1 91 kg cm2 was related to control The highest percentage of weight loss 2 91 was recorded with control and the lowest 1 12 was related to 2 chitosan 2 chitosan showed the highest percentage of phenolic compounds and antioxidant capacity The highest percentage 4 56 of decay was observed with the control and the lowest 0 was abserved with 1 and 2 chitosan Results of Chitosan treatments on storage life of apple fruit Soltani showed that the fruits treated with chitosan after 210 days of storage at 1 C had significantly a higher firmness titratable acid soluble solids vitamin C total phenolics and antioxidant capacity when compared to the control The pH of the extract the weight loss percentage and the percentage of decay were significantly lower than the control 2 chitosan in apple Soltani showed more positive effects than those of the rest Result shows that the use of 2 chitosan enhances the shelf life of apple cv Golab kohanz and apple cultivars Soltani and reduces the speed of biochemical changes in apple fruit and increase fruit quality Key words apple cv soltani apple cv Golab Kohanz chitosan Postharvest life Edible coating
