90 Assessment of Nutritional Status and Concentrations of Heavy Metals in Some Vegetables and Human Health Risk Assessment Ahmad Raisei ahmad raisei @gmail com July 23 2014 Department of Soil Science Isfahan University of Technology Isfahan 84156 83111 Iran Degree M Sc Language FarsiSupervisor Majid Afyuni majid afyuni@gmail comAbstractVegetables are important component of the diet of people Given the high use of chemical fertilizers and pesticidesby farmers in city of Jiroft may result in transfer of toxic elements to humans This study aims to evaluate thestatus of quality characteristics concentration of minerals and heavy metals in greenhouse and farm vegetable inJiroft In addition this study aimed to estimate the daily intake of elements and to determine the hazard potential Target Hazard Quotient and risk index Hazard Index to assess the health risk of non cancer diseases andcombination of elements For the study 11 greenhouses and 10 farms were selected in Jiroft city The soil andplants fruits of each greenhouse and field were sampled Concentrations of macronutrients N P K Ca Mg micronutrients Mn Cu Zn Fe and some heavy metals Cr Ni Pb Cd were measured in the soil and fruit Theresults showed that the mean concentration of phosphorus 55 7 mg kg 1 and potassium 631 mg kg 1 was muchhigher than the critical concentrations The average nitrogen in soil samples was 0 07 which is very low Meanconcentrations of Fe Zn Cu Mn Ni and Cr in soil samples were extracted with DTPA were 2 63 3 74 1 94 6 95 0 34 and 0 39 mg kg 1 respectively The DTPA concentrations of Cd and Pb in all soils were below the detectionlimit of the atomic absorbtion The results of the comparison of the mean concentrations of the elements in thevegetable were near the critical and commonly showed that samples containing deficient micronutrients and highconcentrations of potassium and phosphorus Also all the vegetable samples were Ca deficient in All estimates ofdaily intake EDI all elemente were below the critical values except for chromium in children which was morethan 2 5 time higher than the critical level This shows that Cr may pose risk through the consuption of vegetableparticularly for children in Jiroft The total risk HI for adults adolescents and children respectively 0 11 0 14 0 54 are lower than one and thereforr there is no risk from the vegetable consumption in the region Keywords Vegetables heavy metals estimate of daily intake Hazard Index Jiroft city
